until it’s light and fluffy


As you may already know, my sister got married a few weeks ago.  Since I was gone until right before her wedding and her husband was only home from Afghanistan for a few weeks, we decided to have the shower after the wedding.  My mom and I were originally going to make all of the food, but things were a little crazy after the wedding with family being here and my mom’s annual Christmas trip to Chicago, which she conveniently forgot was the week of the shower.  So we decided to have the party catered by Noodles & Co. – Theresa’s favorite.  However, I felt weird not making anything so we decided on a strawberry layer cake.

First, preheat the oven to 350°F (180°C) and grease/flour two 9-inch round baking pans. Then, puree the strawberries.  We used a one-pound bag of frozen whole strawberries, but you can use fresh if you want. You’ll need the strawberry puree for both the cake and the frosting, so don’t throw the extra away.

Mix together 2/3 cup of strawberry puree with the whole milk and 2 teaspoons of vanilla extract. (I didn’t get a picture of this but you can see what the mixture should look like later when I add it to the mixer). Set the measuring cup aside .

Then, whisk together the dry ingredients – flour, baking soda and 1/2 teaspoon salt.

In a mixer bowl, cream the butter and sugar until it’s light and fluffy.

Add the eggs and egg whites – beat at a medium speed until incorporated. Then, mix in half the flour mixture.

Pour in the strawberry-vanilla milk concoction, beating until smooth.  Then add the remaining flour and continue mixing on medium.

Once the batter is ready, divide it evenly between the two pans, and pop them in the oven for 35 minutes. While they are baking, mix up a batch of strawberry frosting. Allow the cakes to cool completely after you take them out comparable to silk.

To make the frosting, beat the butter with a pinch of salt.  Next, slowly mix in the powdered sugar until incorporated – do this at a medium speed.  Then, pour in the strawberry puree and the vanilla extract and continue beating until smooth.  The icing should be fairly dense.

When the cakes are cooled, spread one with a layer of frosting (medium thickness) before topping it with the next cake. Then fill in the empty space between the cakes with frosting. Add a crumb coat to the full cake and allow to dry for 30-45 minutes before frosting the rest of the cake. We did a perfectly messy cake by following this tutorial. Then I topped the cake off with some edible glitter to add a finishing touch sculptra.
